Ceviche
Peru’s jewel dish is worth the trip to Peru in itself. The classic ceviche will include fish soaked in lime and rotoco peppers, canchitas (corn nuts), yuca, sweet potato, onions, maybe some banana chips.
Papas a la Huancaina
A one of a kind comfort food, Papas a la Huancainais potatoes covered in a spicy cheese sauce that is usually served as an appetizer or as street food.
Aji de Gallina
Sliced chicken soaked in a thick white sauce of cream, ground walnuts, cheese and aji Amarillo, Aji de Gallinais a burst of flavours. This dish echoes Peru's love of sauces thickened with chilies, cheese, cream, or even bread, drenched over and often cooked with meats and vegetables. Easily available, one portion may not be enough to gratify the hungry soul.
Picarones
A yesteryear recipie, picaronesare a type of donut from the mid-19th century. Made of sweet potatoes and squash, the mushy dough is fried and topped with chancaca, a syrup consisting of raw unrefined sugar from sugarcane. The rings are served as dessert and often accompanied with anticuchos (skewered cow heart)
Pisco
Produced only in the regions of Peru and Chile, Pisco is a cult favourite. The colourless drink is usually made into a famous Pisco Sour.
